Begin by preparing all the necessary equipment and make sure everything is sanitised.

If you do not have a hot plate, prepare a water bath or bain-marie using a stove and a shallow pan.

Measure out all your ingredients and combine each phase. Mix Phase B by adding the Xanthan gum gradually to prevent clumping.

Weigh your Phase A (Water phase) together with the (measuring) beaker before heating and note down the weight.

Heat Phase A and Phase C while keeping an eye on the temperature. It must not exceed 75 degrees Celsius.

When both phases are at the same temperature or 5-10 degrees apart, take Phase A off the pan/hot plate and measure the weight, then add the required liquid to reach the exact weight you noted earlier.

Pour Phase A into Phase C. Using a stick blender, pulse 2 times until they are combined and then add Phase B. Mix on the lowest setting for about 5-15 seconds in 2-second intervals until the mixture turns milky, which indicates emulsification.

Use a spatula to mix the cream further until it cools down to 45 degrees Celsius. You will notice the mixture starting to thicken.

Add Phase D very slowly while stirring continuously until everything is well mixed. Followed by Phase E and F.

Measure the pH: Weigh 2 grams of the cream into a clean vessel (a deep bowl or a tall glass/beaker would work) Add distilled water until 20 grams of total weight.

Adjust the pH of the cream if needed. Add a lactic acid solution to lower the pH or a sodium bicarbonate solution to raise it. You want a pH in the range of 5-5.5.

Transfer it into a jar or a pump bottle and label your cream.
